Lemon Chia Granola

Lemon Chia Granola Final

Ingredients

1 2 C. oats
2 1 C. filled with any combination of pepitas, sunflower seeds and crushed walnuts
3 3 tablespoons olive oil
4 1/4 cup honey
5 1/2 teaspoon ground cinnamon
6 1/2 teaspoon salt
7 1 tablespoon chia seed
8 1 tablespoon lemon juice
9 zest from 2 lemons
10 1 C. dried golden raisin and dried cherry

Instructions

Mix up all of the ingredients in a mixing bowl ensuring that all of the pieces of oats and seeds are covered in the liquid, add zest from 1 lemon now.

Spread over large baking pan with parchment paper.

Bake at 290 50 min. Do not stir.

Remove from oven, put dried fruit on top and cover with another sheet of parchment paper and another pan on top to add weight (if desired for a more clumpy result).

Add zest from second lemon.

Let cool in pan and break apart in to clumps.

Enjoy

Enjoy alone, or mixed with fruit and yogurt, or milk as cereal
