Lemon Chia Granola

Granola Prep


  • 2 C. oats
  • 1 C. filled with any combination of pepitas, sunflower seeds and crushed walnuts
  • 3 tablespoons olive oil
  • 1/4 cup honey
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 tablespoon chia seed
  • 1 tablespoon lemon juice
  • zest from 2 lemons
  • 1 C. dried golden raisin and dried cherry


  • mix up all of the ingredients in a mixing bowl ensuring that all of the pieces of oats and seeds are covered in the liquid, add zest from 1 lemon now
  • spread over large baking pan with parchment paper
  • bake at 290 30 min. Do not stir
  • remove from oven, put dried fruit on top and cover with another sheet of parchment paper and another pan on top to add weight (if desired for a more clumpy result)
  • add zest from second lemon
  • let cool in pan and break apart in to clumps


enjoy alone, or with fruit and yogurt, or milk as cereal
